Lamb neck fillet

Individual neck fillet of South Downs farmed lamb.

This versatile cut is perfect for casseroles, stews, tagines, curries and even for marinating and cooking on the barbecue. The neck fillet runs along the shoulder of the lamb and is heavily marbled and densely textured. Think of it as being like the lamb equivalent of ribeye and chuck steak - robust, flavoursome and with the marbling of fat that gives it an extra intensity of flavour. Diced into chunky cubes and added to a curry or tagine the neck fillet pieces will hold their shape and give a meaty texture to the dish.

Each neck fillet is supplied whole and carefully trimmed. Min 300g (serves 2-3)

This product is supplied ‘fresh-frozen’. After allowing our lamb to dry-age for 7 days we butcher, pack and freeze it in small batches to ensure it arrives in perfect condition. After unpacking it can be returned straight to the freezer, or placed in the fridge and allowed to defrost thoroughly before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any meal made with our frozen lamb is perfectly safe to freeze.
