Lamb neck fillet

Individual neck fillet of Saddlescombe Farm lamb.

This versatile cut is perfect for casseroles, stews, tagines, curries and even for marinading and cooking on the barbecue. The neck fillet runs along the shoulder of the lamb and is heavily marbled and densely textured. Think of it as being like the lamb equivalent of ribeye and chuck steak - robust, flavoursome and with the extra fat that gives it an extra intensity of flavour. Diced into a curry or tagine the neck fillet chunks will hold their shape and give a meaty chunky texture to the dish.
