Bone-in sirloin of pasture-fed beef
Often known as a 'wing-rib', this cut is taken from the ribeye end of the sirloin to ensure plenty of marbling. This cut makes a luxurious roasting joint with the tenderness of sirloin steak and the added flavour provided by roasting on the bone. A one-bone joint will feed 1-3 people and a 2-bone rib will feed 3-5.
Cut as a minimum 1.1kg 1-bone or a 2.3kg minimum 2-bone bone-in sirloin joint, chined and ready to roast.
This product is supplied frozen. After dry-ageing our beef we carefully cut, pack and freeze every cut to ensure that it arrives in perfect condition. Once unpacked it can either be placed straight back into the freezer or allowed to defrost fully in the fridge before cooking. Once defrosted your wing-rib joint can be treated as fresh and should be cooked within 5 days.
