Leg of Herdwick mutton

Whole or half leg of 3-week aged pasture-fed Herdwick mutton.

Farmed on the natural pasture and rough grazing of nature-reserves and rewilding projects of the Sussex Wildlife Trust. these hardy native-breed animals have lived a full productive life contributing to habitat management and nature recovery.

This is a stunning traditional roasting joint. Slow roast with winter vegetables, garlic, wine and seasoning until tender. Serve with potatoes, winter greens and a rich gravy.

Our Herdwick mutton legs are large! when planning your meal choose choose from a whole leg (2.8kg, serves 8-10) or a half leg (1.6kg, serves 4-5)

This product is supplied ‘fresh-frozen’. After allowing our mutton to dry-age for 21 days we butcher, pack and freeze it in small batches to ensure it arrives in perfect condition. After unpacking it can be returned straight to the freezer, or placed in the fridge and allowed to defrost thoroughly before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any meal made with our frozen mutton is perfectly safe to freeze.
