Venison haunch joint
Boneless rolled haunch of wild Fallow venison, topped with a pork-fat basting strip.
All our venison is wild and free to roam the fields and woodland of the Adur valley. It is the ultimate in sustainable, seasonal and healthy meat. We hang our venison for 2 weeks prior to butchery in order to allow the textures and flavour to develop fully.
This lean leg joint is packed full of rich gamey flavour. It's perfectly suited for a long slow roast or for braising.
Available as 1kg, or 2kg joint.
This product is supplied ‘fresh-frozen’. We carefully butcher and pack all our venison in small batches before freezing it to ensure quality and freshness. Once unpacked it can be returned straight to the freezer, or allowed to defrost thoroughly in the fridge before cooking. Once defrosted it should be treated as fresh and cooked with 5 days. Any meal made with our venison is safe to refreeze.
