Try this joint for a Sunday roast with a difference.  The full flavour and tenderness of the rump means it is usually served as a steak, but it makes a fantastic roasting joint as well. That extra tenderness of this cut, combined with the intensity of flavour from the 4wk dry0-ageing process means it can be quick-roasted at a high temperature to give a supremely flavoured and tender rare roast.
