This roasting joint really is an under appreciated gem - perfect for any special occasion.  The full flavour and tenderness of the rump means it is usually served as a steak, but it makes an exquisite roasting joint as well. The extra tenderness, combined with the intensity of flavour from the dry-ageing process means it can be quick-roasted at a high temperature to give a supremely flavoured and tender rare roast.

This product is supplied frozen.

After dry-ageing our pasture-fed beef on the bone we carefully prepare and pack each roasting joint before freezing them to ensure they reach our customers in perfect condition. Once unpacked the joint can be returned to the freezer or allowed to defrost fully in the fridge before cooking. Once defrosted the joint should be cooked within 5 days. Any dish made using this produce is safe to refreeze.
