Boneless rolled rib of pasture-fed dry-aged beef. Ribeye steak wrapped in its 'cap' of natural fat.
Cover the outer fat in a crust of salt, pepper, flour and mustard before searing and then roasting in a hot oven.

After dry-ageing on the bone we carefully prepare and 'fresh-freeze' our rolled rib joints. Once unpacked the joint can be placed straight into the freezer, or allowed to defrost fully in the fridge for 24-36 hours (depending on size). Once defrosted it can be treated as fresh and should be cooked within 5 days. Any dish cooked with this product is safe to freeze.
