Another of the 'rare treats' from the offal ox cheeks are fantastic for a super-slow braise. When it comes to cooking the rule for ox cheeks is the longer the better. For anyone prepared to invest a bit of time and effort the rewards are an intense hit of rich and earthy beef flavours - perfect served with a stew of winter root veg.

This cut is supplied fresh-frozen. Once unpacked it can be returned straight to the freezer, or allowed to defrost thoroughly in the fridge before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any dish cooked with the product is perfectly safe to refreeze.
