Cannon of wild venison

Trimmed cannon of wild fallow venison. 

The cannon is taken from the eye of the loin. This small cylindrical muscle is lean, full of flavour and supremely tender.

Simply season and sear the whole muscle on a high heat before allowing to rest and then cutting across the grain to serve. Perfect served pink with a simple north-African inspired salad combining couscous, roasted cauliflower, pomegranate seeds and a harissa yoghurt dressing.

This product is supplied ‘fresh-frozen’. We butcher, pack and freeze our wild venison in small batches to ensure it arrives in perfect condition. After unpacking it can be returned straight to the freezer, or placed in the fridge and allowed to defrost thoroughly before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any meal made with our frozen venison is perfectly safe to freeze.
