Rolled brisket of dry-aged grass-fed beef. Think of this joint as being the beef equivalent of pork belly; loads of flavour richly marbled and best suited to long slow cooking. Set aside a few hours to gently pot roast this joint with rough-cut seasonal root vegetables for a warming and nourishing hot-pot.
