Bavette Steak is a little-known cut that packs a huge flavour. Seasoned, seared and served rare before being cut across the grain it makes an uniquely rich flavoured and textured steak. It's also versatile enough to be marinaded and slow cooked, as well as being the key ingredient in traditional Cornish Pasty recipes.
