Pigs trotters

Free-range high-welfare pigs trotters, split in half.

Trotters are a good value and versatile ingredient. Great for giving a rich glossy depth to sauces and casseroles and as a source of gelatine for pies. Use them to form the base of homemade ramen broth or cook and serve as meal in their own right.

A hugely underrated and overlooked ingredient, pigs trotters are definitely worth the effort.
