Dry aged pork shank

7 day dry-aged pork shank. Cut from high-welfare free-range pork this cut is perfect for a long slow roast or braised with seasonal vegetables. Not to be confused with the cured gammon hock this cut is best known within the regional cuisine of Bavaria, and especially as part of the annual Oktoberfest celebrations. Known as 'Schweinshaxse' and traditionally served with mash, braised cabbage or sauerkraut this is a simple and delicious cut that is often overlooked in British cuisine.

We cut our shanks, or knuckles, from large pigs so each hock will weight 1.2-1.3kg - enough to serve 3-4 people.

Sold individually. This cut is supplied fresh-frozen. Once unpacked it can be returned straight to the freezer, or allowed to defrost thoroughly in the fridge before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any dish cooked with the product is perfectly safe to refreeze.
