Oven ready wild mallard.
This game bird has dark ruby coloured and deeply flavoured flesh. They are much leaner than the typical farmed duck so are well suited to a quick roast (40-45 mins) and served with seasonal vegetables and a sharp autumn-fruits sauce or accompaniment to cut through the rich flavours of the duck.
Each mallard will serve 1-2 people. May contain shot.
This product is supplied ‘fresh-frozen’. We carefully butcher and pack all our game in small batches before freezing it to ensure quality and freshness. Once unpacked it can be returned straight to the freezer, or allowed to defrost thoroughly in the fridge before cooking. Once defrosted it should be treated as fresh and cooked with 5 days. Any meal made with our game is safe to refreeze.
