Our 100% pasture-fed beef is dry-aged on the bone for 4weeks prior to butchery in order to ensure maximum tenderness and depth of flavour. This joint is perfect roasted rare to medium and carved for the ultimate roast beef dinner. Serves 6-8 guests.
After dry-ageing our whole beef fillets are cut to a size of 1.8kg, carefully trimmed with the tail removed.
This product is supplied frozen. After preparing the fillet we 'fresh-freeze' them individually to ensure quality and freshness. Once it arrives it can either be placed straight back into the freezer or allowed to defrost thoroughly in the freezer. Once defrosted it can be treated as fresh and cooked to your preferred taste. Any dish made with our beef fillet is safe to refreeze
