Venison steak
Lean and nutritious wild Fallow venison haunch steaks.
All our venison is responsibly sourced directly from the Lock Estate in West Sussex, less than a mile from the butchery. These animals live a truly natural life, free to roam the fields and woodlands grazing the pollinator and wildflower crops planted as part of the estate's conservation management programme. We dry-age all our venison for 1 to 2 weeks to allow the flavour to develop.
This meat is lean, nutritious and packed with flavour. Our haunch steaks are great for a simple and quick meal - simply season and flash fry before allowing to rest and then thinly cutting across the grain to serve slightly pink. Alternatively they can be cooked long and slow or diced into a hearty winter casserole.
Each steak weighs 200g minimum.
All our venison is carefully butchered and packed in small batches before being frozen to conserve the quality, nutrients and to guarantee it arrives in the best condition. Once you receive your delivery the steaks can either be placed straight back into your home freezer or allowed to fully defrost in the fridge before cooking. Once defrosted they should be treated as fresh and cooked within 5 days. Any meal made using our frozen venison haunch steaks will be safe to refreeze
