Venison bay & juniper sausages

Handmade sausages made with wild fallow venison from the fields and woodlands of the Adur Valley in West Sussex.

Our 100% natural venison sausages are made using prime cuts of 2week aged fallow venison, with a small amount of pork fat to add sweetness and complement the rich flavour of the venison . We keep the other ingredients simple - salt, pepper, Bay, Juniper and an aromatic blend of fresh herbs and spices herbs to complement the flavours of the meat. They contain no added chemical preservatives and are made with a rusk containing no gluten.

We make our natural sausages in small batches before fresh-freezing them to ensure they arrive in perfect condition. Once unpacked the frozen sausages can be returned to the freezer or allowed to defrost thoroughly in the fridge before cooking. Once defrosted they can be treated as fresh and cooked within 5 days. Any dishes made using the defrosted sausages will be safe to freeze.
