Pasture-fed whole picanha
Taken from the top of the rump, and often referred to in this country as the 'rump cap' the picanha is the classic South American barbecue cut. We seam the muscle to separate the cap from the rest of the rump, creating a large, flat, and marbled cut of meat with a cap of fat. The picanha is full of flavour and perfectly suited for a simple season-and-sear cook on the barbecue, or roasted in a hot oven. Rub with salt and cracked black pepper, sear, and quick-cook on a high heat before resting and then cutting across the grain to serve. The picanha is delicious served with a simple dressed leaf salad and a classic chimichurri sauce.
Our 100% pasture-fed picanha joints are cut to a minimum weight of 800g (serves 1-2), 1.3kg (serves 2-3) or 1.5kg (serves 3-4).
This product is supplied frozen. After dry-aging all our beef on the bone our butchers carefully prepare the individual cuts before fresh-freezing them to ensure they arrive to you in perfect condition. Once unpacked the joint can be placed straight into the freezer or allowed to defrost fully in the fridge before cooking. Once defrosted it can be treated as fresh and should be cooked within 5 days. Any dish cooked with our picanha joint is safe to freeze.
