Wing rib of pasture-fed beef
Wing-rib joint from the rib end of the sirloin. This cut makes a luxurious roasting joint with the tenderness of sirloin steak and the added flavour provided by roasting on the bone. A one-bone rib will feed 1-3 people and a 2-bone rib will feed 3-5.
Cut as a minimum 1.1kg 1-bone or a 2.3kg minimum 2-bone roasting joint, chined and ready to roast.
This product is supplied frozen. After dry-ageing our beef we carefully cut, pack and freeze every cut to ensure that it arrives in perfect condition. Once unpacked it can either be placed straight back into the freezer or allowed to defrost fully in the fridge before cooking. Once defrosted your wing-rib joint can be treated as fresh and should be cooked within 5 days.
