Truly free-range slow-grown chicken

Slow-matured, 'total freedom' 81 day free-range chicken.

All our chicken comes from the small Leicestershire farm owned and run by Nick Ball and Jacob Sykes. They use slower growing breeds and allow their birds access to 40 acres of farmland where they are able to scratch, forage and engage in natural behaviour. Their birds are reared in small flocks with access to warm, dry, and naturally ventilated mobile housing and are given no antibiotics or growth hormones during their lifetime. These birds are reared to a minimum of 81 days, higher even than organic standards. Farmed to the highest welfare standards, the result of this slow and natural life is a darker, firmer and denser meat with more fat and far more flavour.

Place one of our chicken in a roasting dish, surround it with roughly chopped vegetables, garlic cloves and sprigs of fresh thyme. Cover the skin of the chicken with unsalted butter and season it with sea salt and cracked black pepper. Stuff the cavity with onions and a cut lemon and then roast in the oven until the juices run clear. For the perfect roast serve with crisp roasted potatoes and our hand-made free-range pigs in blankets

The smell of the chicken as it cooks makes it worthwhile in itself, but the taste of the crispy skin, the tender and succulent meat makes this a roast every bit as good as any beef, lamb or pork joint. Cook it midweek and stretch the leftovers through to the weekend. Last of all boil up the carcass and make a hearty soup or chicken stock.

1.3-1.5kg. Comfortable feeds 1-2 people

1.5-1.8kg. Comfortably feeds 2-3 people

1.8-2kg. Comfortably feeds 3-4 people

2-2.5kg. Comfortably feeds 4-5 people

2.5-3kg. Comfortably feeds 5-6 people

3-3.5kg. Comfortably feeds 6-7 people

5kg capon roaster. Extra large. Comfortably feeds 10-12 people

All our whole roasting free-range chicken come with giblets - perfect when combined with the cooking juices to make a gravy to accompany your roast.

Free-range chickens sold individually. We prepare, pack and 'fresh-freeze' them in small batches in order to guarantee they arrive in their best condition. They will be delivered frozen and once unpacked can either be placed straight into the freezer, or removed from the bag and allowed to defrost thoroughly in the fridge before cooking. Once defrosted they can be treated as fresh and should be cooked within 5 days. Any meal made using the defrosted chicken can be refrozen after cooking.
