Free-range chicken cushion with sage & thyme stuffing
A whole boneless crown of high welfare free-range chicken stuffed with traditional pork, sage and thyme sausagemeat and wrapped in our own nitrate-free streaky bacon.
This is a great alternative to a whole roast chicken. The combination of proper free-range chicken with the herby flavour of our traditional pork, sage and thyme sausage meat is perfectly topped off by a layer of crispy dry-cured streaky bacon. Its also simple to cook; simply place in the oven at 180 degrees in a foil covered oven dish. Cook for 45-50 minutes before removing the foil and placing back in the oven to brown for a further 10-15 minutes. Check the juices are running clear and then leave to rest for 15 mins before carving. Serve with seasonal vegetables and gravy. Any left overs are delicious served cold or made into sandwiches.
Each cushion weighs 0.9-1.1kg and will feed 4-5 people.
Our chicken cushions are expertly hand-made in small batches by our butchers before being frozen. Once delivered they can be placed straight back into the freezer or allowed to defrost fully in the fridge before cooking. Once defrosted they should be cooked within 5 days.
