Cannon of mutton

Whole trimmed cannon of pasture-fed mutton.

The cannon is taken from the eye of the loin. This small cylindrical muscle packs all the complex earthy flavours of slow-grown mutton whilst being tender enough for simple, quick cooking.

Simply season and sear the whole muscle on a high heat before allowing to rest and then cutting across the grain to serve. Perfect served with a simple north-African inspired salad combining couscous, roasted cauliflower, pomegranate seeds and a harissa yoghurt dressing.

This product is supplied ‘fresh-frozen’. After allowing our mutton to dry-age for 21 days we butcher, pack and freeze it in small batches to ensure it arrives in perfect condition. After unpacking it can be returned straight to the freezer, or placed in the fridge and allowed to defrost thoroughly before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any meal made with our frozen mutton is perfectly safe to freeze.
