Butterflied shoulder of lamb
Boneless butterflied shoulder of pasture-fed lamb reared on the wildflower-rich meadows of the South Downs in Sussex.
Butterflied shoulder is perfect for the barbecue. Cover in a lightly seasoned parsley, oregano, garlic, lemon, and yoghurt dressing and wrap in foil. Leave the joint to marinade for a few hours, or overnight if possible. Place away from the main heat source in the barbecue and allow to cook long and slow before roughly carving and serving on a board for guests to share. For really tender meat the marinated joint can be wrapped and pre-cooked in the oven for a couple of hours before being allowed to finish on the barbecue to take on the smoky flavours and crispy finish.
This product is supplied ‘fresh-frozen’. After allowing our lamb to dry-age for 7 days we butcher, pack and freeze it in small batches to ensure it arrives in perfect condition. After unpacking it can be returned straight to the freezer, or placed in the fridge and allowed to defrost thoroughly before cooking. Once defrosted it should be treated as fresh and cooked within 5 days. Any meal made with our frozen lamb is perfectly safe to freeze.
