Will my produce arrive fresh or frozen?
The majority of meat in your order will arrive freshly prepared and packed. However, some products will be supplied as ‘fresh-frozen’; meaning they have been prepared as fresh and then carefully frozen before being packed for delivery.
Why is some of our produce frozen?
Ending food waste
At Garlic Wood we’re on a constant mission to produce and deliver the best quality, ethical and sustainable meat we possibly can. This process starts by finding and working with farmers who are dedicated to conserving the landscape, promoting biodiversity and rearing livestock with care and respect. But it doesn’t end there; we too have a responsibility to prepare and deliver that food to our customers with the same care and attention the farmers have shown in producing it.
By far the biggest contribution we can make is to ensure that nothing is ever wasted. Fresh-freezing allows us to challenge the wasteful model of producing food and waiting for someone to order it. This traditional retail model relies on a built-in expectation of wastage. We don’t think this is good enough. By making use of fresh-frozen where necessary we can ensure that every last part of every animal is utilised and turned into high quality produce.
Increasing our product range
We will always be committed to the ethos of ‘whole-carcass’ butchery and seasonal sourcing. By fresh-freezing the more unusual cuts, or items only produced in small quantities on each animal we can ensure they are consistently available to our customers rather than being wasted.
As well as allowing us to offer more unusual cuts the process of freezing gives us the ability to offer a more diverse range of items. Our chefs and butchers can prepare small batches of high-quality products ready to cook at home. Free from the restraints of wastage we can move away from just the ‘safe’ or ‘best-selling’ essentials and offer our customers a more innovative range; without ever having to compromise the fundamental ethical principles underlying what we do.
Guaranteeing quality and freshness.
It sounds counter-intuitive to say that freezing produce can guarantee freshness, but it does. This belief is a hang-over from the suspicion that freezing is a ‘last resort’ to save stock that hasn’t sold. Our frozen items are always prepared when produce is at its absolute best before being immediately packed and frozen. This ‘fresh-frozen’ approach combined with our state-of-the-art commercial refrigeration means that food retains its nutritional value and will be as good as fresh when properly defrosted ready for cooking.
How will I know if an item is fresh or frozen when ordering?
We will always make clear on the product listing whether you are buying a fresh or frozen item. Our fresh-frozen logo will be clearly visible on all pre-frozen products on our website, and all items sent out are clearly labelled with a frozen-on date and a use-by date.
How will my items be delivered and what
should I do when they arrive?
All fresh-frozen items will be delivered frozen along with any fresh chilled items in your order. We use a chilled packaging system to ensure that items arrive to you in the best possible condition. More detail about our packaging and delivery can be found here.
On unpacking your order any frozen items can be returned to the freezer, noting the frozen shelf life details on the label.
If they are to be consumed immediately they should be placed in the fridge and allowed to slowly defrost. When defrosting they should remain below 5 degrees to maintain quality and should be fully defrosted before cooking. Once defrosted the item will have the same 5-7day shelf life as any fresh produce. Any dish or meal you make using our frozen produce will be perfectly safe to refreeze for up to 3 months.
